Pasta with ham and melon

Another quick, simple recipe great for summer!

 

Ingredients for one person:

  • 60 grams of farfalle
  • 1 tbsp of olive oil
  • 30 – 40 grams of Parmaham
  • 50 grams of cherry tomatoes
  • 10-15 grams of watercress
  • 100 grams of cantaloupe
  • handful of chives
  • 40 grams of feta or mozzarella

 

 

Method:

  • boil the pasta according to the package instructions, then drain
  • Chop the cantaloupe in small cubes or break apart with a spoon
  • Heat a little bit of the oil in a pan and fry the ham for a couple of minutes to make it crispy. In the meantime you can chop the chives.
  • Remove the ham and add to the pasta
  • Chop the tomatoes in half and add them to the pan for 3-4 minutes
  • Remove and add them to the pasta along with the cantaloupe
  • Add the rest of the olive oil to the pasta along with the chives, watercress and season with some extra salt and pepper to taste
  • Crumble the feta over the pasta or add the mozzarella balls
